The little story of salted butter caramel
We must go back to 1343, during the reign of King Philip VI of Valois. He introduced throughout the kingdom a tax on salt, known as the salt gabelle. As a result, the price of salt rose significantly, and salted butter gave way to unsalted butter. However, Brittany was exempt from this tax, and salt remained inexpensive. Thus, the production of salted butter continued, and Breton cooks added it to caramel.
Did you know that it was in Quiberon that the salted butter caramel candy was created? Henri Le Roux created this famous confectionery in 1977, and it is now known throughout the world.
