Description
Originating from the province of Shandong, in the area of present-day Qingzhou, the Yidu chili is a traditional Chinese variety prized for its bright red color and aromatic mildness. Of the broad cayenne type, it offers moderate heat, favoring balance and depth.
The Yidu stands out for its delicate profile, slightly earthy and subtly tangy. It is primarily sought after to enhance color and enrich flavors without overpowering the dish.
It elevates Chinese hot pots, braised dishes, stir-fries, sauces, and chili oils, while fitting perfectly into other world cuisines, from Mediterranean stews to more contemporary Asian recipes.
Usage: It is best used dried in dishes that allow it to gradually rehydrate: stews, sauces, soups, oils... We recommend using an infuser (e.g., a tea ball) to prevent the chili from dispersing in the preparation. To remove it at the right time, taste your dish regularly. For milder heat, add it in the last 15 minutes of cooking. Conversely, if you want to enjoy its full strength, you can add it from the start. Ideally, dose by quarter chili until you reach the desired heat level.
