Colatura di alici, great-granddaughter of Roman garum, is obtained by pressing anchovy fillets for a long time alternated with layers of salt and letting the resulting liquid drain slowly. The result is a condiment with a strong taste, a true concentrate of the sea.
Use colatura to prepare classic spaghetti, or try it on a white pizza, or season and add flavor to boiled vegetables.
