Taggiasche olives are a precious variety grown in western Liguria, especially in the province of Imperia.
They are named so because the monks of Saint Columban, coming from the monastic island of Lérins, introduced them to Taggia. Over the centuries, grafts of this olive variety spread throughout Italy, but the main crops have remained in the province of Imperia.
This variety is very famous and renowned for producing extra virgin olive oil and is considered one of the best table olives, with a small but very flavorful fruit.
Ingredients: Taggiasche olives 125 g (drained), water, salt, flavored with bay leaf, rosemary, thyme.
