“Furia Italiana” flour is a strong flour (high W) from type 0 soft wheat, ideal for making the great leavened products of the Italian tradition such as: puff pastry, brioches and croissants, panettone, pizzas and focaccias.
This is due to the large amount of protein it contains, which in contact with liquid produces gluten. The latter retains the leavening gases allowing the dough to expand to a considerable size during baking.

The Langa Marino organic stone mill is located in Cossano Belbo (CN). The history of the mill is very old.
