The "Furia Italiana" flour is a strong (high W) type 0 soft wheat flour, ideal for making traditional Italian sourdough products such as: puff pastry, brioches and croissants, panettone, pizzas, and focaccias.
This is due to the high amount of protein it contains, which produces gluten when in contact with liquid. The gluten traps rising gases, allowing the dough to expand significantly during baking.

The organic stone mill Langa Marino is located in Cossano Belbo (CN). The mill's history is very old.
