“Light” version of the classic Buratto type 2 flour ground on natural stone.
The Buratto “pastry”, with a W of 180–200, is ideal for all doughs with direct fermentation and quick maturation (6 to 8 hours at room temperature) as well as for preparing shortcrust pastry, cookies, and breadsticks.
With naturally present wheat germ.
