Fregola is a traditional Sardinian product in the shape of small irregular spheres of varying diameter (the large fregola from 4 to 7 mm), with a rustic shape and characteristic flavor; it takes on a golden color after natural drying and roasting.
The history of fregola is very old: according to some sources, this type of pasta was already produced and exported in the 10th century. In the Sardinian culinary tradition, fregola is used for starters based on fish and shellfish or for the preparation of soups.
