Colatura di alici, the great-great-granddaughter of Roman garum, is made by pressing anchovy fillets alternated with layers of salt for a long time and letting the resulting liquid slowly drain. The result is a condiment with a strong flavor, a true concentrate of the sea.
Use colatura to prepare classic spaghetti, try it on a white pizza, or season and add flavor to boiled vegetables.
