Alfeltra's Spaghetti alla Chitarra, made with semolina carefully selected from 100% Italian wheat, are mixed with water from the Lattari mountains, bronze-drawn, and slowly dried for up to 48 hours.
The unique production technique creates this shape with a perfect square cross-section ideal for traditional Italian dishes.
Try them instead of bucatini for cacio e pepe or with a vegetable and salted ricotta sauce.

The award-winning Pastificio Olimpio Afeltra was founded in 1848 and is located in the heart of Gragnano. In a monumental building dating back to the early 19th century, 5,000 kg of pasta are produced daily, fully respecting the artisanal method. The finest durum wheat semolina arrives and is analyzed with each delivery to ensure it meets the required excellence in protein, gluten, and ash content. The dough and pre-kneading are done under vacuum, very slowly, using the purest water from the Monti Lattari of Gragnano. The drawing is exclusively bronze, and drying lasts from 24 to 52 hours, depending on the shape, with temperatures never exceeding 48 degrees Celsius.
