Grown in Phu Quoc - the largest island of the Vietnamese archipelago - this rare pepper, harvested at full maturity, has a complex flavor. Spicy, vegetal, and even iodine notes make Phu Quoc red a unique pepper. It will enhance your red meats, fatty fish, starches, and cheeses. Use it ground or crushed, and add it at the end of cooking or when plating to avoid prolonged cooking.
