HOW TO MAKE POLENTA (without stirring)
Use a heavy-bottomed pot with a fine sieve to distribute heat evenly. Heat the water and, before boiling, slowly pour in the flour while whisking to avoid lumps. Once the flour is incorporated, stir for a few more minutes, then reduce the heat, cover, and cook, stirring occasionally, for the indicated time.
Dosages:
Coarse flour: 200 g per liter of water;
Fine flour: 220 g per liter of water
Cooking time:
FINE about 90 minutes.
Since these are ancient, non-irrigated, and very translucent corn varieties, the longer the cooking time, the softer and more flavorful the polenta will be.
