Setaccio, that is, whole soft wheat flour from the Marino Mill. Made from raw materials strictly sourced from organic farming, this flour is stone-ground. It can be used in all types of preparations, but it is especially suitable for making whole grain bread and grissinis. The same process as for the "Macina," but with only the thickest part of the bran (fiber) removed, to obtain a fully whole grain flour, but with a smaller amount of bran.
The Langa Marino organic stone mill is located in Cossano Belbo (CN). The history of the mill is very old. Today, three generations of the Marino family work together, continuing with passion to preserve the art of stone milling. To avoid "burning" the flours, the large French circular stones must be hand-hammered once a week. The Marinos use only the best wheats in the world, all organic and non-GMO. They are also specialists in the rare "eight-row" corn, named after the number of grain rows.
