The award-winning Pastificio Olimpio Afeltra was founded in 1848 and is located in the heart of Gragnano. In a monumental early 19th-century building, 5,000 kg of pasta are produced daily following the artisanal method. The finest durum wheat semolina arrives and is analyzed with each delivery to ensure it meets the required excellence standards for protein, gluten, and ash content. Kneading and pre-kneading are done under vacuum, very slowly, and with the purest water from the Lattari mountains of Gragnano. The shaping is done exclusively with bronze dies, and drying lasts from 24 to 52 hours, depending on the shapes, with temperatures never exceeding 48 degrees Celsius.
