Bonci pizza is a METHOD for tray and peel pizza created by Gabriele Bonci, the King of Roman pizza. Bonci pizza is quite different from the usual pizzas we all know because the dough he uses is very hydrated and very light, and it is also a homemade pizza.
The Flour: the quality of the pizza depends on the characteristics of the flour. Always try to use organic, untreated flours, preferably stone-ground. The flour Bonci recommends is Mulino Marino.
To get a good result, follow 4 phases and you only need your home oven!
Ingredients
- 1 kg of "0" wheat flour W260/280
- 2 g of dry brewer's yeast
- 750 ml of water
- 20 g of salt
- 20 ml of extra virgin olive oil
First phase
- Add all the flour, 2 g of dry brewer's yeast, and 650 g of water
- Knead roughly for 1 to 2 minutes (possibly with a spoon)
- The dough should be coarse, like a biga (Photo 1)
- Cover and rest for 20-30 minutes
- Add 20 g of salt, the remaining water (100 g), and the oil.
- Cover and rest for 20-30 minutes

Second phase
- Make the first series of strengthening folds for the dough (Photo 2)
- Rest for 20 minutes
- Make the second series of strengthening folds for the dough
- Rest for 20 minutes
- Make the third series of strengthening folds for the dough
- Rest for 20 minutes
- In the refrigerator, resting for 24 hours.

Third phase after 24 hours
- Remove the dough from the refrigerator
- Rest for 20 minutes
- Divide the dough according to the size of the trays (Use semolina to help you)
- Let rise between 2 and 4 hours (depends on room temperature)
- Spread the dough
- Prepare the trays

Photo 4: The dough balls should be full of bubbles and soft. Spread by touching from the outside towards the center (this is not Neapolitan pizza!)

Fourth phase
- Preheat the oven to 250°C
- Bake for 15 minutes at the bottom of the oven (Check the bottom of the pizza)
- Bake for 8 minutes in the center of the oven (Check if it seems cooked. If necessary, leave in the oven a few more minutes)
