Description
Madagascar is the world's leading producer of vanilla planifolia, but a new production seems to be bearing fruit: the cross between Mexican pompona and Madagascar planifolia. Despite its success, it is not produced in as large volumes as planifolia because it requires more sunlight and does not thrive in the same locations.
The Madagascar hybrid Pompona is particularly impressive: very long (on average 23cm), black, and oily. Its notes of ripe fruit, licorice, and undergrowth transport us.
Especially interesting for professionals, as the processing yield is more attractive; one pompona pod is equivalent to 2 to 4 planifolia pods.
It is a valuable ally for making sauces and creams and suits both desserts and meats. It has a broader aromatic palette than planifolia but guarantees a flavorful journey.
