Garum dei Romano is both an evolution and a revolution. The Romano family, from which the name comes, has recreated the main sauce of ancient Roman cuisine, innovating it. Compared to the traditional version, Garum has been revolutionized by taste and creativity.
The result is an amber and glossy sauce made from fatty fish, rock salt, and natural spices, mixed, fermented, and aged for 60 months in "Cariteddhi," the old disused oak barrels once used for wine fermentation, to create a new condiment.
