Moreschina flour gets its name from the dark, almost "Moorish" color of its components. Made from 8 cereals, including 5 whole seeds and vital wheat germ, it offers a unique and unmistakable taste and aroma.
Moreschina is made from cereals selected for their high nutritional qualities: flax seeds rich in omega-3, oat flakes as a source of protein and fatty acids, millet and sesame seeds as plant sources of calcium, as well as rye flour rich in fiber and whole soy.
It is the only multigrain flour in which the seeds are kept whole: when exposed to the heat of the oven, they fully release their aromas and flavor.
Pasta made with Molino Vigevano flours is particularly light and digestible thanks to the presence of vital wheat germ, which promotes optimal fermentation and maturation.
With a strength of W270, this flour is very easy to work with and roll out, thanks to its good water absorption capacity.
It is ideal for medium to long fermentations:
- 6 to 8 hours at room temperature
- up to 12, 24, or 72 hours in controlled fermentation at 6°C
Perfect for making breads, multigrain rolls, pizzas, and focaccias.
