An authentic rub to spice up your chicken Jamaican style. Extremely flavorful, it contains among other things Scotch Bonnet pepper and allspice: two essentials in chicken jerk

Also called "rubbing spices" or "rubbing salt," it is most often used as a dry marinade.
The principle is to apply the rub directly to the food, without mixing it with oil or other liquids.

It is essential for an American-style barbecue. Its main function is to flavor the meats without altering their texture.
Its use can also extend to fish or vegetables/legumes.

There is no place in Jamaica where you won't find Chicken Jerk, simply because jerk is to Jamaica what cheese is to France.

Traditionally, the chicken is marinated for several hours with - among other things - the indispensable Scotch Bonnet pepper, which is unfortunately sometimes replaced by cayenne pepper to reduce costs. Yet, beyond its heat, it has an extraordinary flavor. It is this, along with the seeds and leaves of allspice (Jamaican pepper), that give Chicken Jerk its authentic taste.
