ROSSI 1947 - Croxetti 500g

Description

These are dough discs about 4 cm in diameter, rather thick, made by cutting the dough with a special wooden tool, which is then used to imprint a decoration. This outer decoration used to cut the dough serves to better "prepare" it for seasoning. You can add any sauce, pesto, nut sauces, or pine nuts. Dating back to the Renaissance, they were printed with the coats of arms of noble houses, to also reaffirm territorial predominance during local family ceremonies. Regarding the origin of the name, there are several theories: some argue it is inspired by the old silver coin of the "knight" from the Republic of Genoa; others say it comes from "difficult" (a bit hard), and others from "crocetto" (from the cross engraved on the discs). In the Levant region of Liguria, the word "corzetto" means the wooden mold used to shape the dough and imprint it.
