Description
Cardamom is a herbaceous plant with a rhizome, like turmeric and ginger (among others). At the ends of the stems, the cardamom flowers appear discreetly, followed by the fruits. Handpicked and then sun-dried, the fruits take the form of a capsule containing small, highly aromatic seeds.
In Europe, its lemony and peppery notes wonderfully scent pastries. In India, it is essential and considered a queen spice. It flavors curries and accompanies many traditional Indian dishes. It is also widely used in Asian and African cuisine.
USAGE:
It can be used whole, lightly crushed with the flat side of a knife, to be simmered. For baking or short cooking times, it is better to use only the black seeds contained in the pods or to use it ground. Although the seeds inside the capsule are the very essence of this spice, contrary to popular belief, the green pod also contains volatile oils. Therefore, grinding it whole is not without interest.
Your spice expert’s tip:
If you simmer whole pods, remember to remove them at the end of cooking, as biting into a cardamom seed is not very pleasant. If you are not used to using it, use it sparingly. For a stew, count on 3 to 5 lightly crushed pods, depending on the desired intensity. For baking, half a teaspoon of ground cardamom is enough for a first experience.
PAIRING:
It enhances the simplest dishes. It can flavor meats and fish when added to the cooking juice. Accompany your vegetables, purees, marinades, and rice. In baking, it usually flavors gingerbreads, compotes, tarts, and cakes. It pairs particularly well with chocolate, coffee, carrot, eggplant, lamb, poultry, herring, cuttlefish, pineapple, and figs.
