If there is one spice blend to have in your kitchen, it’s this one! Oregano, sumac, and roasted sesame seeds from Uganda, a true delight both in cooked dishes and on salads or as an appetizer on warm bread toasts. A must-try if the name Zaatar means nothing to you.

In Arabic, zaatar means “thyme” but it also refers to all plants in the Lamiaceae family such as oregano or savory.

It also refers to a certain type of oregano. This blend dates back millennia as the word appears several times in the Bible.

Its content can vary depending on where you are in the Middle East, but generally the base remains the same: dried thyme, oregano or marjoram, sumac and toasted sesame seeds.

Regarding Zaatar’s reputation as a “health” food, this also goes back a long way, as in the 12th century, the great Spanish Jewish philosopher Maimonides reportedly prescribed it to his patients to treat various ailments.

Modern studies on Zaatar confirm that Maimonides was really on the right track.

Sumac is rich in flavonoids;

thyme and oregano are rich in thymol, an essential oil, and carvacrol, a phenol;

thymol and carvacrol have antioxidant, antiseptic, and antifungal properties;

thymol has also been prescribed to help control coughs in patients with bronchitis (which might explain why Maimonides recommended the famous Zaatar for treating colds).

Carvacrol (a chemical component of oregano) affects dopamine neurotransmitter levels, which helps explain why this blend is somewhat addictive!
