These are not just any pasta: Afeltra's Paccheri are made exclusively with 100% Italian wheat, bronze-drawn and slowly dried.
Pacchero originated in Gragnano and is its historic ancient shape. Once known as the "poor man's pasta," as just a few large paccheri were enough to fill the plate.
Artisanal craftsmanship, bronze drawing, and slow drying ensure this shape has the right roughness to perfectly hold your favorite sauce. Try them with a traditional Bolognese sauce or baked, stuffed with ricotta and spinach.

The award-winning Pastificio Olimpio Afeltra was founded in 1848 and is located in the heart of Gragnano. In a monumental early 19th-century building, 5,000 kg of pasta are produced daily with full respect for the artisanal method. The finest durum wheat semolina arrives and is analyzed with each delivery to ensure it meets the required excellence standards in terms of protein, gluten, and ash content. The dough and pre-kneading are done under vacuum, very slowly, using the purest water from the Monti Lattari of Gragnano. The drawing is exclusively bronze, and drying lasts from 24 to 52 hours, depending on the shape, with temperatures never exceeding 48 degrees Celsius.
