The award-winning Pastificio Olimpio Afeltra was founded in 1848 and is located in the heart of Gragnano. In a monumental building dating back to the early 19th century, 5,000 kg of pasta are produced daily, fully respecting the traditional artisanal method. The finest durum wheat semolina arrives and is analyzed with each delivery to ensure it meets the required standards of excellence in terms of protein, gluten, and ash content. The dough and pre-kneading are done under vacuum, very slowly, using the purest water from the Monti Lattari of Gragnano. The shaping is exclusively done with bronze dies, and drying lasts from 24 to 52 hours, depending on the shapes, with temperatures never exceeding 48 degrees Celsius.
