Fregola - or fregula - is the typical Sardinian pasta, made from semolina and water. It is a simple product, from popular tradition and widely used today. We have kept the simplicity of the production process in order to offer the end consumer an artisanal product as it was made in the past. We use Senatore Cappelli wheat, an entirely Italian variety unknown to most people. Its history is very ancient, since it comes from the cultures of Puglia and Basilicata. We have selected Senatore Cappelli flour to offer a viable and healthy alternative to fregola, with more vitamins, minerals, lipids and amino acids than common wheat. This is certified organic dry pasta, from raw material to final processing.
