Born from the agronomic genius of one of Italy’s greatest and least known researchers, and dedicated to Senator Raffaele Cappelli, this variety of wheat, tenacious and generous, is capable of condensing the sun of the Murge and the authentic, sincere flavor of the 20th century into its grains.
Interpreted by our master pasta makers in harmony with the pure water of the Latemar, it delivers warmth and color with a frank and vigorous character, deeply Italian.
Raw, it evokes burlap sacks and licorice root. When cooked, it recalls freshly milked milk, chestnut bark, and boiled potato. On the palate, both tender and lively, it reveals the sweetness of bread crumb with a surprisingly saline finish.
