Description
From the ginger family, cardamom is the fruit of the plant and not the root. Also called seed of paradise, it has a taste that is fresh, spicy and lemony.
It is a fabulously aromatic spice, with a camphorous, lemony and refreshing nose. In India, where it is considered a queen spice with its king pepper, it is used in many curries, rice dishes and desserts. It gives the traditional pastries of Northern Europe such a unique taste while in the Middle East, it most often flavors coffee so well that it is found in Nubian coffee. In some recipes, you can use the whole capsule or grind it whole, since the green envelope also contains aromatic essential oils.
