It is easy to prepare a pasta dish at home and the taste will be unique: because it is something you made yourself, which you can share with your friends and family.
Let's see how to do it together!
PREPARING THE DOUGH
Ingredients:
- 300g of 00 Wheat Flour (Triple 00)
- 200g of Durum Wheat Semolina
- 5 eggs (about 250g)
Pour the flours into a bowl and add the eggs in the center.

Mix well until all the ingredients are combined.
A homogeneous and consistent result should be obtained. If you find it too dry, add a few drops of water, and if you find it too soft, add a little flour. It is important that it does not stick to your fingers!
ROLLING OUT THE DOUGH
Rolling out the dough by hand is an ancient and fascinating art. But it takes time and practice. Lots of practice!
A pasta machine can help you: it offers incredible assistance to achieve the same result in half the time.

Once positioned, set the machine's regulator to setting 0 and pass a piece of dough through by turning the crank.
Use flour on the sides of the dough to prevent it from sticking.
Fold it over itself and pass it through at least 3-4 times. You should get an elongated, even, and consistent result.
It is time to gradually move from setting 1 to setting 6. Only one step at a time! The result should be a thin sheet of dough: flour it and cut it into pieces about 25 cm long.
CUTTING THE FETTUCCINE
Fettuccine ("little ribbons") are a variety of long pasta of Italian origin, similar to tagliatelle. It is a popular recipe in Italy, especially in Rome. Ideal for hearty sauces such as meat sauce and mushroom-based sauces.
Our machines MARCATO AMPIA 150 CLASSIC, AMPIAMOTOR 220 V, ATLAS 150 CLASSIC, and ATLAS 150 Pasta Set come with the basic accessory to cut fettuccine. Even the MARCATO PASTABIKE or MARCATO PASTAWHEEL could be used with a more irregular but equally good result.
Using one of our machines, simply insert the crank into the accessory and pass the sheet of pasta through it.

We suggest flouring the final result and spreading it on the MARCATO TACAPASTA to ensure a better final outcome.
After about 1 to 2 hours, the pasta is dry and can be ready to cook or store.
Whatever the result, it will be your result: be proud!
