CAMPISI - Bottarga grated bluefin tuna Pot 60g
Bottarga de Campisi grated tuna. The translation of the Arabic term “bat?rikh” is literally “dried fish eggs”.
It is obtained, in fact, from the drying and subsequent salting of tuna roe. To obtain it, you need a long and tiring process that begins with the extraction of tuna roe, their deep cleaning and subsequent salting. After pressing and before marketing is maturation for at least 90 days, a period of time essential to give bottarga the typical golden-amber color and the intense flavor that characterizes it.
Tuna Bottarga has a stronger flavor than curly or mullet bottarga. Used above all to prepare bottarga pasta but also to flavor croutons for an aperitif with sea flavors; hors d’oeuvres and seconds.
Ingredients: tuna roe (99%), sea salt.
